What’s the rationale behind this meal? I wanted a fry up without the bread. I am trying to eat low carb as much as possible by eating the vegetable rainbow instead of highly processed carbohydrates like bread, rolls, and flat breads. Opting for vegetables that will keep me feeling fuller for longer, I went for one of my favourite vegetables – brocoli. So you could say the meal was functional and fit for purpose for what I wanted it to do. Also another benefit is the release of lower insulin in the blood stream for less production of fat stores in the body. Making me feel full while keeping my blood sugar levels lower than I would have expected from eating bread, a more complex starch. So of you ask me what I am doing differently from my other weightloss attempts in the past, this time is I am chosing swaps that are very practical and align with my future eating habits of a healthier lifestyle.
